The Food
Southern food is as unique as the landscape and culture of the Southern Thailand, reflecting the traditions and lifestyle of its people. Most of the dishes in the South include ingredients easily found at hand such as herbs and coconuts. Coconut is a popular ingredient in many recipes using milk tempers the heat of peppers. The oil is often used for frying and the grated meat can be serves as a condiment.
By comparing the food from different regions of Thailand, the food from the South tends to be very hot, due to the abundance use of chilies. With Malay, Javanese and Indian influences and its own creativity, the South produces an extraordinary range of curries, with strong flavors and intense aromas. Kaeng Tai Pla is one of the all time favorite southern dishes. It is very hot curry made with fish maw, green beans, pickled bamboo shoots and potato. Another integral southern cuisine is the hot and sour yellow curry or Kaeng Leuang, which is made from fish, pineapple, green beans and green papaya with the yellow color from the fresh turmeric.
In addition to the distinct flavors of the local southern cuisines, the exquisite seafood dishes are also available throughout the region. The warm seas provide an abundance of fresh seafood from the surrounding waters, prepared simply by steaming or frying, giving a treat to seafood lovers.
