The food of the northern region is not only unique as its culture, but also one of the healthiest cuisines because the cool, highland climate allows Northern Thailand to have a greater variety of vegetables, roots and herbs as the ingredient to the dishes than other regional Thai cuisines.
The traditional way of eating Northern food is kneading steamed sticky rice into small balls with the finger and dipping them into variety of chili sauces or curry. Northern curries are milder than the Northeastern and the Southern Thailand, with tantalizing aroma of spices and ingredients picked from the local hills and forests. The most popular dishes that one should not miss when visited the North are Khao Soi which is a curry broth with egg noodles, pickled cabbage, shallots, lime and chili paste, and Kaeng Hang Le, which is a pork curry with ginger, tamarind, peanut and turmeric. One peculiarity of the Northern region is fermented pork sausage wrapped in banana leaves called Naem.

A visit to the North will not be completed without a Khan Tok dinner, where the guests sit on the floor around the Tok table and help themselves to the variety of dishes served in small dishes such as curries, dips, and glutinous rice on the Tok. The Khan Tok dinner is often accompanied by a demonstration of traditional dance performance, giving the guests an opportunity to be in the real Lanna atmosphere while enjoying the authentic Northern cuisine.
